Pectinase is one of the enzymes often used in industrial sector, especially food industry, such as extracting clarifying juices. Previous studies have obtained pectinolytic microbial cultures isolated cocoa beans. production pure pectin substrates citrus or apples costs a lot because these pectins are expensive. Liquid substrate pods TSH 858 ICS 60 with concentration 10% good amount for production, percentage total 0.823%. The activity crude extract enzyme 416,780 mU/mL. Precipitation ammonium sulfate dialysis increased by 452,335 mU/mL 586.88 mU/mL, respectively. Enzymes can be repeatedly immobilization. In this study, entrapment method sodium CaCl2 was designed response surface method. optimum 0.5% 0.3 M CaCl2, an immobilized at 40.782%. Stability repeated use done up to 5 times.
